Executive Chef of SALUT in Edina
Inaugurates Second Tuesday CHEF’S TASTING DINNERS
 
Minneapolis, Minn., August 25, 2009 – Wasting no time in seizing control at SALUT in Edina, new executive chef Christopher Van Proosdy has begun his tenure with bold action:
 
First, Proosdy defied ownership’s demand that he change his name to the more French-sounding “Christophe de Proosdé”. Then CJ (as he prefers to be called) inaugurated second Tuesday-of-the-month CHEF’S TASTING DINNERS, beginning September 8.
 
A Homegrown Talent....
 
CJ comes to SALUT Edina from its sibling restaurant in St. Paul, where he held the position of sous chef, working beside Chef Jeff Anderson. He also has previous stints at Figlio and Muffuletta Café.
“Though I had always cooked, I didn’t envision a career as a chef, but exposure to the talent at Parasole ignited my love of French cooking,” says the Madison, Wisconsin native, “Taking the helm at SALUT gives me the perfect platform to introduce others to the world’s greatest cuisine.”

Taking place on the second Tuesday of every month, CHEF’S TASTING DINNERS feature five courses at a price of $36.95. For an additional $19.95, the chef pairs each course with a 3-oz. glass of specially selected wine.
 
“Tasting dinners are a chef’s dream come true,” says CJ. “They’re a chance to exercise one’s creativity, work with limited-supply ingredients, and provide a total culinary experience. For my first dinner, the focus will be on the intensity of flavor inherent in high-quality ingredients:”

“The details of subsequent CHEF’S TASTING DINNERS will not be publicized in advance,” says Scott Chaffee, General Manager of Salut Edina. “The goal is to provide maximum leeway for CJ to exercise his talent. And if inspiration strikes that day, we want him to be free to refine his menu accordingly.”
